
Italian Sausage With Bow Tie Pasta

Ingredients:
● 1 lb Italian sausage (mild or spicy, your choice), casing removed
● 12 oz bow tie pasta (farfalle)
● 1 tbsp olive oil
● 1 small onion, chopped
● 2 cloves garlic, minced
● 1 (14.5 oz) can crushed tomatoes
● 1/2 cup heavy cream (or whole milk for a lighter option)
● 1/2 tsp dried oregano
● 1/2 tsp dried basil
● 1/4 tsp red pepper flakes (optional, for a little heat)
● Salt and pepper, to taste
● 1/4 cup grated Parmesan cheese
● Fresh basil or parsley, chopped (for garnish)
Instructions:
1. Cook the Pasta:
● Bring a large pot of salted water to a boil.
● Add the bow tie pasta and cook according to package directions until al dente (usually about 10-12 minutes).
● Drain the pasta, reserving 1/2 cup of pasta water. Set aside.
2. Cook the Sausage:
● While the pasta is cooking, heat olive oil in a large skillet over medium heat.
● Add the Italian sausage, breaking it up with a spoon as it cooks.
● Cook for 6-8 minutes, or until browned and cooked through.
● Remove any excess fat if needed.
3. Sauté the Vegetables:
● Add the chopped onion to the skillet with the sausage and sauté for 2-3 minutes until the onion is softened.
● Add minced garlic and cook for 1 minute, until fragrant.
4. Make the Sauce:
● Stir in the crushed tomatoes, heavy cream, oregano, basil, red pepper flakes (if using), salt, and pepper.
● Bring the sauce to a simmer, then reduce the heat to low and let it cook for 5 minutes, allowing the flavors to meld together.
5. Combine Pasta and Sauce:
● Add the cooked bow tie pasta to the skillet with the sausage and sauce mixture.
● Toss well to coat the pasta in the sauce. If the sauce is too thick, add the reserved pasta water a little at a time to reach your desired consistency.
6. Finish and Serve:
● Stir in the grated Parmesan cheese until melted and combined.
● Taste and adjust seasoning with salt and pepper as needed.
● Garnish with fresh chopped basil or parsley before serving
